I have fermented soaked, cooked, blended mung beans with the SIBO yogurt strains which turned out well.Same procedure as dairy yogurt.It makes a wonderful hummus.

Why does it have to be a non-starchy vegetable? If you’re worried about carbs, the microbes eat most of those during fermentation.

I have a Sous Vide.
Are L. Reuteri & Gasseri Lactobacillus species? 
Tomatoes burn me right now. Can I use cabbage or cucumbers?

Dr. Davis said we can "ferment those Lactobacillus species in foods." I was asking about fermenting Reuteri & Gasseri in foods.
Are Reuteri & Gasseri Lactobacillus species?

Yes. L. reuteri or lactobacillus reuteri and L. gasseri, Lactobacillus gasseri.

Fascinating thread and obviously we need more research. Dana, I hope you find a non-dairy, non-coconut substrate that works and report back.

I love the dairy yogurts but they don’t love me.

I just contacted Cutting Edge Cultures for instructions on fermenting cucumbers, asparagus or cabbage with their L. Reuteri starter. I promise if & when they respond, I will share the instructions here.
