I have been working a Chaffle recipe for a sandwich wrapper. I wanted it to be crispy on the outside, soft and fluffy inside, with enough structure to hold together. Since I don’t like the texture that nut flours introduce the binder for this is guar gum but psyllium can also be used without too much impact on texture

Chaffle Recipe, makes 2 chaffles about 1 gram of carbs for entire recipe
1 egg 
50 grams shredded cheese
1/8 tsp baking soda 
1/4 tsp guar gum or psyllium husk powder
salt and pepper to taste 
Directions:
Pre-heat your Chaffee maker 
Lightly beat a large egg, add the shredded cheese but don’t mix yet. The Chaffle in the photo was made with 5 grams of parm, 15 grams mozzarella, and 30 grams of jack. If you use more than 15 or 20 grams of mozzarella reduce the guar gum by half. 
Sprinkle the baking soda and Guam gum evenly over the cheese shreds and when the Chaffee maker is hot spray with avocado oil, mix all the ingredients together until we’ll combined and place half in the Chaffee maker and cook for 5 to 6 minutes. Remove and cook the second chaffle.

The sandwich pictured contains 1 scrambled egg, 2 thin slices deli ham and a slice of American cheese which adds some nice creaminess. The filling adds another 3 grams net carbs for a sandwich total of 4 grams net carbs
