A second failure making coconut milk yogurt left me scratching my head. I steam sanitized, started with fresh L. reuteri tablets, used the highest fat coconut milk I could find (9g fat per 1/4 cup), immersion blended the coconut milk before mixing in the bugs, and fermented for 40 hours in my Instant Pot.  While better than the first batch and certainly edible it was about half soupy, kefir-like product in consistency and half thin cloudy fluid which I discarded.

What the Hell!  So I re-examined everything and there it was right on the overlooked coconut milk ingredient list, potassium metabisulfate which is (drum roll please) an F-ing antimicrobial preservative - AARRRGH!

So dear Members, do not be a moron like old HH.  ALWAYS, ALWAYS, ALWAYS, read your labels, LOL!

Got a new case of coconut milk (this time 12g fat per 1/4 cup) and L. reuteri on the way.  Gonna try it with some guar gum this time just for fun.

Used 2 tbsp. unmodified potato starch (Bob’s Red Mill) and 1 tbsp. table sugar.

I can’t imagine sour coconut milk tasting any good. Coconut oil by itself makes me want to heave, although in a recipe it’s completely fine. Good luck with your next batch. Let us know how it goes

I wonder if amping up the potato starch/inulin/sugar to substantially greater quantities would yield a nice end-product? 

I’ll give it a try.

I would like to know to since I can’t do milk. Lactose intolerant BAD! :( PLUS it runs up my blood sugars.:( I LOVE yogurt but can’t have it. Even when I did the milk kefir it messed with my allergies to the lactose. :(

That Coconut yogurt recipe ferments at 108 F.   Isn’t that too high a temp to get proper count of the good bacteria?
