aggi99 and JJB, thank you for the info. I am still wondering if I can store the extra jars in my basement or not since I don’t have a lot of room in the fridge. Any thoughts on that or on how much vinegar to add to stop the fermentation?

When I ferment apples and carrots, I just push them down into the water with a spoon once a day. I add some more water to cover them if needed.

I like using those glass weights as well. They clean up beautifully in the top rack of the dishwasher.
