I just attempted my first batch of L. Reuteri yogurt.   It was a disaster.  I am NOT a cook.  Nowhere near.  I make exceedingly simple meals, and this recipe was challenging to me because I had questions about nearly every step.  However, I read several threads to ensure I would follow absolutely correctly.  I even purchased a sous vide for this venture.  I did so because a sous vide seems like the best way to ensure stable temperature.

Here is what I did:
  • I crushed 10 of the BioGaia Gastrus L. Reuteri tablets in a glass bowl with a flat bottomed, heavy glass.  They were powdery by the time I finished.  

  • I mixed in 2 Tbsp of inulin powder and mixed them up.  

  • I added 2 Tbsp of whole fat cow’s milk and stirred, stirred, stirred for 5 full minutes (I timed it) to make sure it was really mixed up well.  From reading, I got the impression that not mixing extremely well could be a point of failure in the final product. 

  • I added the rest of the quart of cow’s milk and stirred up really well.

  • I poured the mixture into Ball jars and closed.  

  • I placed into a tall metal pot, mostly filled with water.  The pot already had the sous vide attached.

  • I adjusted the water height so it was to the cap of the jar.

  • I turned on the sous vide to 101 degrees F.

  • I let it run for 36 hours.
The result:  GROSS.  It was separated and smelled like a waste treatment plant. It’s a sticky, nasty mess in the jars, and I’ll have to soak those for a long while before putting them in the dishwasher.

Disappointed? For sure.  I love plain, tart yogurt and was looking forward to it, along with the health benefits.  

Perplexed? Absolutely. I felt I followed the instructions completely.  Is this just a hit or miss kind of deal?  

What did I do wrong here?

Any and all suggestions are welcome.

As noted in the beginning, I am NOT a cook by any stretch of the imagination.  If I can’t get this to work out, I will return the sous vide.  Outside of this purpose, I have no use at all for it and can’t see wasting the money.  I only bought it because it seemed like a fool-proof method due to the ability to set the right temperature and leave it alone.  The less intervention from a non-kitchen person like me the better, I felt.

Another possibility is that your equipment--jar, spoon, bowl--were contaminated and introduced unwanted bacterial/fungal species. 

Your utensils don’t have to be sterile, but they should be thoroughly cleaned with soap and water.
