Please correct me if my logic is wrong.

I am laughing at the people on the internet that state others should eat whole grains and stay away from red meat due to "saturated fat".  That the saturated fat from red meat will "clog your veins".

I find this interesting because from what I understand, tallow is 45% mono-unsaturated!!

Excess carbs (or carbs that can’t be absorbed properly due to insulin resistance) from "whole grains" get converted to 100% SATURATED fat by the liver by de novo lipogenesis.

[And saturated fat really isn’t the problem; fats generated via de novo lipogenesis are packaged in VLDL which are known to turn to LDL and small LDL particles -- which are known to cause heart disease.]

So  maybe when they find saturated fat in the walls of the arteries (due to inflammation etc), maybe it is saturated fat generated by the liver from "healthy" whole grains..

Whole grains have over twice as much saturated fat in them as tallow, eaten in excess or by someone that is carb intolerant due to severe insulin resistance.
